    @SSNUTHIN3 years ago If you let the steaks sit with the salt for at least an hour (but up to a day) unsealed in the fridge the steak will draw the salt into the meat using osmosis and be even juicier and more flavorful when you're done cooking it. Once you add the butter and herbs, turn the heat low until the butter starts to froth and then you can baste.
